Its specially developed medal-like shape has been studied to give maximum surface area and ensure an easy melting that increases fusion during baking. This in turn gives a uniform covering of products while using minimum quantities. It is made either by squashing a mozzarella ball into a medal shape (mozzarella medallions) or by slicing a mozzarella log (mozzarella slices).
